We make Awani jam in the mountains where we are close to sources of fruit. Being close to the farms allows us to pick fruit late so we can maintain its flavour and freshness.
Our Balinese kitchen sits in the grounds of a beautiful little farm, a typical example of a Balinese mixed farm, self-sustaining with many different types of fruit trees as well as livestock.
We have converted a traditional Balinese eight-pillared building into a spacious, modern kitchen while maintaining the spirit of the original structure. The exterior wood and brick features of the original building remain. In updating the interior, we have strictly applied international standards of production and hygiene.
Our staff are from the local village. We give our staff extensive training to prepare and carefully cook the preserves by hand to retain the delicious flavour of the fruit.
